Yesterday's dinner consisted of breaded chicken breasts, green beans, homemade garlic cheese biscuits and loaded baked potatoes.
The chicken was simple. First I lined a shallow cookie sheet with foil (easier clean up) and rub some oil on it to keep the chicken from sticking. Then I took three small bowls, one was flour, one was seasoned breadcrumbs, and one was an egg. I took each boneless, skinless breast and first dipped it into the flour, then into the egg, then generously covered it in the breadcrumbs. I cooked them on 400 F for about 30-40 minutes.
And what do the in laws walk in with while I am in the middle of cooking this? Fried chicken. Mine was definitely better, lol!
